What is the difference between fresh milk and regular milk?


Fresh milk undergoes a pasteurisation process in which it is subjected to a temperature between 72Cº and 90Cº for 15 seconds to eliminate part of the microbial load.

However, conventional milk (UHT) is subjected to between 135Cº and 140Cº degree temperatures for five seconds to sterilise it and eliminate all the microbial load.


Before, fresh milk had a very early expiry date. Now, thanks to the processes to which the milk is subjected, it has an expiry date of approximately 21 to 24 days.
